# Gevrey-Chambertin La Justice 2005

“Two” the symbol of perfect balance is the number that best sums up this parcel. La Justice is two hectares located at the bottom of the village with two distinct terroirs. The alluvial “les graviers” gives very concentrated grapes of confirmed maturity, whereas the higher part yields a lighter style wine. The stronger characteristics of La Justice make this a wine to lay down.

Vendanges

Harvest date: September 24th, 2005.
Selection: hand-sorted in the vineyard and on arrival in the winery.

Vinification

Harvest de-stemmed, not crushed and vatted by gravitaty.
No yeast addition.
Maceration: pre-fermentation, cold  (15° C).
Length of maceration: 16 days.
Cap-punched and pumped-over once a day until mid-fermentation.

Elevage

Length: 16 months
Type: in barrels.
Percentage of new barrels: 30 %
Toasting: long and gentle heat, without charring.
Source of wood: Nevers, forêt de Bertranges
New barrels racked once in July 2006.
Light and soft filtration. No fining.

Mise en bouteille

By gravity.
January 11th, 2007.
Limited to 4.085 bottles.
