# Beaune 1er Cru « Clos du Roi » 2009

If any town can claim to be born under the auspices of a guiding star, Beaune can. The star, seen on numerous paintings or embroideries at the Hôtel-Dieu, is the love between its two founders, Nicolas Rolin and his wife Guigone de Salins. Encircled by its ramparts and bastions like a cask by its staves, Beaune is a flamboyant gothic representation of a love story between Burgundy and Flanders, in the days of the Order of the Golden Fleece.

Harvest

Harvest date: September 15th, 2009 (Leaf Day). Healthy crop. Selection: 5% hand-sorted in the vineyard and on arrival in the winery.

Vinification

Harvest 100% de-stemmed, not crushed and vatted by gravitaty. No yeast addition. Maceration: pre-fermentation, cold (12-15° C) during 5 days. Cap-punched once a day until mid-fermentation and a light pumping-over until the end of vatting time. Vatting time: 25 days Pressing with the vertical press.

Ageing

Length: 9 months Type: in barrels. Percentage of new barrels: 30 % Toasting: long and slow. Source of wood: Allier, Nevers. No barrels racked. Light and soft filtration. No fining.

Bottling

By gravity. July 1st, 2010. (Flower Day) Limited to 1.459 bottles.
