# Savigny-Lès-Beaune Premier Cru Les Marconnets 2009

Over the ages the Savigny-lès-Beaune vineyards have belonged to the Dukes of Burgundy, the clergy, the Knights of Malta, and local gentry. Les Marconnets is in a splendid location on the Beaune side of the steep hillside. The soil, though calcareous further down the hill, is sandy and pebbly here, rich in iron, ideal for our oldish vines.


Harvest date: September 9th and 10th, 2009 (Fruit Day & Root Day). Selection: 5% hand-sorted in the vineyard and on arrival in the winery.


Harvest 100% de-stemmed, not crushed. No yeast addition. Gravity vated. Maceration: pre-fermentation, cold (12-15° C) during 5 days. Vatting-time: 20 days. Cap-punched once a day until mid-fermentation and a light pumping-over until the end of vatting time. Pressing with the vertical press.


Length: 9 months Type: in barrels. Percentage of new barrels: 40 % Toasting: long and slow. Source of wood: Allier, Nevers No new barrels racked. Light and soft filtration. No fining.


By gravity. Juillet 1st and 2nd , 2010. (Flower day) Limited to 10.075 bottles and 1.800 half-bottles.
