On the estate, we carry out as many of our winemaking operations as possible in accordance with the lu-nar calendar. This calendar evolves each year according to the changing position of the stars.

This schematic diagram can be read as follows:

"FLOWER" AND "FRUIT" DAYS
This is when we work on the plants, carrying out tasks such as pruning, disbudding, tying up, green pruning, trimming, and of course, harvesting.

"LEAF" AND "ROOT" DAYS
This is when we avoid interfering with the vines and carry out tasks such as removing pruned wood from the trellises. On “root” days, work is carried out to aid the root system, such as plowing or earthing up.

We have also shown the waxing and waning moon each month. These two lunar phases affect the sap in the plants. Some days, the moon and other planets are in unfavorable positions, known as “lunar nodes”. During these periods, we avoid any direct work on the vines such as plowing or pruning. Different tasks require different rhythms.

In winemaking, taking all these elements into account is above all of all a matter of conviction. We are seeking to work in a certain harmony with nature, according to its rhythms and its breath, to better listen to it, understand it, and to bring out the best it has to offer.
