Vendanges

Harvest date: September 14th , 2009 (Flower Day). Healthy crop. Selection: hand-sorted in the vineyard and on arrival in the winery.

Vinification

Pressing: whole bunches for 2 hours 30. Settling: 16 hours at 12° Slow and complete fermentation in barrels. Alcoholic fermentation: 2 months. Pneumatic press.

Elevage

Lenth: 14 months in barrels and three months in tank. Percentage of new barrels: 30 % Toasting: medium heat. Source of wood: Allier Stirring of the lees: Four times per month during the fruit days and rising moon until December. Racked in tank in March. Light fining and soft filtration.

Mise en bouteille

By gravity. March 22nd, 2011. Limited to 3.745 bottles.
