Harvest date: September 18th, 20th and 22nd, 2002 Healthy crop. Selection: in the vineyard and on arrival in the winery.

Vinification

Harvest de-stemmed, not crushed. No yeast addition. Maceration: pre-fermentation, cold. Length of maceration: 22 days. Cap-punching: twice a day

Elevage

Length: 15 months Type: in barrels Percentage of new barrels: 55 % Toasting: Long and gentle heat, without charring. Source of wood : Allier Racking: new barrels racked once in September. Fining, filtration: none – but enzyme addition at the end

Mise en bouteille

On January 7th, 2004 Limited to 1.557 bottles and 30 magnums.
