THE WINERY
Our new rough staves from Cîteaux forest
At the end of March, we headed off
to choose the rough staves for our
new barrels. This wood comes from
oaks in the state-owned Cîteaux
forest, 16 kilometres from the estate.
When the ONF decides to manage
a section and it is time to fell the
trees, the trunks are sold at auction
and bought by sawmills. The stave
mills responsible for the rough
staves (the planks used to make
barrels) are only interested in the
first two metres for barrel-making,
as they must be free of knots and
must have a straight grain to avoid
any sagging. Every year, we buy
100% of the wood we need and
then it spends at least three years
drying on the estate. After this,
the wood is given to coopers for
them to fashion into barrels with
our desired ‘medium toast’.
