♦ THE HARVEST
A look back at seven highly memorable weeks of harvesting. BACK TO THE CLASSIC
Years ending in 5 are often great vintages, and 2025 is certainly no ORDER FOLLOWING
exception. The quality of the fruit was ideal, perfect even, with healthy,
highly photogenic bunches that possessed a balance verging on the THE CÔTES
impudent. We would have had everything we desired if it hadn’t been
for the quantities because, following on from the miniscule harvest in ♦ AN INCREDIBLE
2024, once again this year the yields let us down with 2025 offering us
only around a third of normal volumes. Nature always has the last word, TEAM
and so we can only acquiesce to the reality of this small production, sommaire
limited by the excesses of the summer with its heat and drought.
This rare vintage will fortunately be compensated by the generous ♦ MACERATION
2023 which contributes to creating an average volume over the last LONG, WHOLE BUNCH
three years that we would be tempted to qualify as ‘normal’. We shall FERMENTATION
have to content ourselves with this, and appreciate more finely than
ever the vagaries of nature…
