The appellation

The vines of Chassagne-Montrachet are located at the southernmost end of the Côte de Beaune, after those of Puligny-Montrachet. The village is the second-to-last on the Côte d’Or before Santenay. The eastern slope of Chassagne is home to a pink marble quarry, the stone from which was used to make the Pyramids of the Louvre.

The Chassagne-Montrachet En l’Ormeau AOC covers a total of 1,8670 hectares and our little plot of 0.1299 hectares is located to the south of the village of Chassagne.

The climat is located at the crossroads leading to Santenay and Morgeot, and it takes its name from the elm tree that must have once been planted there. These trees reaching 20 to 30 meters were often planted at crossroads to mark out certain plots.

In the Middle Ages, judges would dispense justice beneath elms that were generally planted in front of the local seigneur’s house.

Varietal: 100% Chardonnay

Soil type: Brown limestone with alternating layers of clay-limestone marl

Plantation density: 10,000 vines per hectare

Pruning: Guyot

The wine

Harvest date: 26 August 2020 (leaf day)
Sorting in the vines and upon reception at the winery
Yield: 52.5 hectoliters per hectare

Pressing in the pneumatique press in whole bunches for 2.5 hours
Settling: 12 hours
Fermentation began in stainless-steel vats and finished in oak barrels

Duration and type: Nine months in oak and one month in stainless steel
New barrels: 33%
Toast: Medium
Origin of staves: Cîteaux
Stirring: Once per month under a waxing moon until December
Blending in stainless-steel vats one month before bottling
No fining. Light filtration.
